Tentative 2012 BBQ Schedule
Calling BBQers of All Skill Levels . . .
Calling all cooks! Whether you are part of a professional competitive BBQ team or just a backyard BBQ cook, you may want to pit your skills against other barbeque chefs. Several competitive divisions offer lots of opportunity to demonstrate your cooking skills. Enter one or enter all divisions. Rules vary.
Kansas City Barbeque Society (KCBS) BBQ Competition
Teams can check in Friday after 12:00 noon to set up, have the mandatory meat/site inspection, and then start on-site preparation of four categories of barbeque: chicken, pork ribs, pork shoulder, and beef brisket. Turn-in times on Saturday will be 12:00 noon, 12:30 pm, 1:00 pm, and 1:30 pm for each respectively.
Even if you've never cooked barbeque competitively before, this might be your first attempt to compete with the big BBQ guns. Several accomplished and award-winning BBQ teams plan to attend. And beginners will find these experienced teams helpful and ready to offer their own competition tips and stories.

Junior BBQ Competition
On Sunday, young people 16 years and under can pair up with an adult (Dad, Mom, Uncle Bob, or any adult over 16 years) to form a Backyard Junior Grilling Team. Set up an ordinary backyard-style grill and then choose two of four grill favorites to cook up onsite for the judges:
Burgers
Hot Dogs
Sausage
Wings
Apply your favorite condiments, use your favorite bread or rolls, and mix with your favorite seasonings and sauces. The judges will visit each Junior team to hear their concept and sample their version of these backyard grill favorites.

Professional BBQ Tip: Apple-Juice Spritz
Ever wonder how some champion BBQ pit masters keep their pork ribs moist and flavorful even with long cooking times? Many will put apple juice or white grape juice in a spray bottle and spritz their BBQ continuously while cooking. Another favorite spritz is to use a 50-50 mixture of apple juice and Jack Daniels whiskey.
Try it the next time you are cooking pork ribs the authentic BBQ way - low and slow.
